Regional Bar Manager

At Zuma we are hiring a Regional Bar Manager – Italy to lead, inspire, and continue the elevation of our bar operations across the country. With three exceptional locations in Italy, our permanent flagship in Rome and our seasonal destinations in Porto Cervo and Capri, this role is pivotal in ensuring Zuma’s beverage DNA is upheld across all venues.

You will uphold our bar DNA, curating the guest journey while developing and empowering our talented bar teams.

What You Will Do

• Lead and oversee bar operations across Rome, Porto Cervo, and Capri, ensuring consistency, profitability, and a Zuma standard guest experience
• Curate and evolve cocktail and spirits lists, keeping Zuma at the forefront of innovation while maintaining brand DNA
• Hire, coach, mentor, and develop the regions bar teams, ensuring succession planning and continuous growth
• Implement training that uphold Zuma standards and empower teams to excel
• Manage supplier relationships, purchasing, and quality control, negotiating rates that balance excellence and profitability
• Ensure compliance with all health, safety, and food safety standards across locations
• Collaborate with restaurant leadership teams to deliver operational excellence
• Act as a cultural ambassador for Zuma, driving engagement, passion, and pride across all Italian bar teams

What We’re Looking For

• A proven leader with experience overseeing multiple bar operations, ideally in luxury or high-volume hospitality
• Strong knowledge of cocktails, spirits, and global bar trends, with the creativity to keep Zuma ahead of the curve
• Exceptional people leadership skills with a track record of building high-performing teams
• Commercial acumen with experience in supplier negotiation, stock management, and profitability analysis
• Fluent in English and Italian, with excellent communication and collaboration skills
• Flexible and adaptable, comfortable leading both permanent and seasonal operations
