Description of the research activity:
Assessments will be carried out on the nutritional quality and digestibility of foods, the bioavailability of micronutrients and bioactive compounds, and the impact of domestic and industrial processing technologies on these variables will be evaluated. The aim will be to contribute to the definition of healthy and preventive dietary models capable of positively influencing the composition and functionality of the gut microbiota.
